Chocolate Chip "Cookie Dough" Balls
Saw this idea on CultivateWithKruti's page on instagram the other day and I knew I had to try them! I have been on a dessert kick lately, and the extra lbs around my midsection are showing it. Sooo I decided to try these out as a healthy alternative to dessert. They are actually really healthy and have a lot of protein to balance out the sweetness.
The best part though: they taste like cookie dough. Like really though, they do. But how? The almond flour, coconut butter and nut butter combined just give the right texture and taste!
I promise if you try these out you will be just as addicted as I am.
Ingredients:
1 cup almond flour
1 cup oat flour (you can buy it- or just run rolled oats through a food processor for a few minutes, and voila! it turns into oat flour!)
1 cup nut butter (cashew, peanut, almond whatever you like)
2 T coconut butter (melted)
2 T honey
2 scoops collagen peptides (optional)
1 heaping scoop vanilla protein powder (my favorite kind)
2 T almond milk
1/4 cup chopped dark chocolate (you can use squares, or chips)
All you have to do is mix it all together for a few minutes until it's all very well mixed together. It will look crumbly and be hard to mix at first, but eventually it will all stick together.
Pro-tip: spray your hands with cooking spray before rolling into balls. It will keep it from sticking!
This recipe makes about 20-25 balls depending on size. Store in an airtight container for up to 2 weeks, but my guess is they won't stick around for that long anyways! ;)
When I make these, I always store about half in the freezer. That way, incase I don't eat them all, they stay fresh longer. When you're ready to eat them, just put them in the fridge for a couple hours and they are ready to eat!
